Birthday Cupcakes

Green batter ready for baking.The littlest Dukeshire turns nine on Saturday and, for her family gathering, she has requested special birthday cupcakes. My husband, chef extraordinaire, has a tried and true recipe for red velvet cake. Here it is, ready to bake. Can you spot the change to the recipe? She’s having an animal themed birthday party on Saturday with her friends so we’re introducing the theme tomorrow.P1050231

I’m all about saving money and my cupcake decorating will follow suit. The cupcake papers were on sale, I got the animal print edible tattoos on clearance for less than $2 and I had a 50% off coupon for the fondant! The great thing about the fondant is there is plenty to do a cake at another time too.

I love to share a good thing with others. Here’s our family’s favourite cake recipe!

Red Velvet Cake


1/2 cup shortening
1 1/2 cup granulated sugar
2 eggs
2 tbsp cocoa
1 1/2 oz liquid red food colouring
1 tsp salt
2 1/2 cups all-purpose flour
1 tsp vanilla
1 cup buttermilk
1 tsp baking soda
1 tbsp vinegar


Cream shortening; beat in sugar gradually. Add eggs one at a time, beating well after each one. Make paste of cocoa and food colouring; add to creamed mixture. Add salt, flour and vanilla alternately with buttermilk, beating well after each addition. Sprinkle baking soda over vinegar; pour over batter. Stir until thoroughly mixed. Bake in 3-8″ pans or 2-9″ pans for 30 minutes at 350F.
